Weekend Project {The Best Ever Strawberry Ice Cream}

This was my weekend project... Last weekend, the weekend before that, and the weekend before that... For my 31st birthday back in February, my dear friend Jess bought me an ice cream maker... I had always wanted one... And she knew it... It was a huge surprise... I've had such a wonderful time with it so far... And this strawberry ice cream has been the best recipe yet... Enjoy!
The Best Ever Strawberry Ice Cream
(Adapted from a few different recipes I've come across)
3 cups fresh ripe strawberries, stemmed and sliced
4 tablespoons freshly squeezed lemon juice
1 1/2 cups sugar, divided
1 1/4 cups milk
2 3/4 cups heavy cream
1 1/2 teaspoons pure vanilla extract
In a small bowl, combine the strawberries with the lemon juice and 1/2 cup of the sugar. Stir gently and allow the strawberries to macerate in the juices for about 2 hours. Strain the berries, reserving juices. Mash or puree the berries (I used a food processor).
In a medium bowl, use a mixer on low speed to combine the milk and remaining granulated sugar (1 cup) until the sugar is dissolved, about 2 minutes. On low, mix in the heavy cream, reserved strawberry juice, mashed strawberries, and vanilla.
Transfer to ice cream maker and follow the manufacturer's instructions. Transfer to a covered glass bowl and freeze immediately.
